Gill Meller is a rock star in British TV cooking circles. If you have ever watched the River Cottage Television series, you’ll see why. He is a big advocate of seasonal cooking and making the most of ingredients on hand (even looking at food stuffs available to you that you might not consider). You won’t find fancy sauces or tons of filler starch in his recipes either. He uses few ingredients, and showcases their natural qualities as you can see from the video. Tricky techniques and culinary toys are not his thing. but ease and quick results are where he shines. And he utilizes foods from his surroundings in imaginative ways which should inspire us as we look at the produce in our burgeoning farmers’ markets.
